Welcome to the Spicy Wifey Blog site!
This blog is designed for the primary purpose of swapping recipes and sharing cooking tips. Occasionally we all experience ruts from time to time when cooking for our significant others and family. We invite you to use this as a resource for inspiration and sharing.
We are focusing on recipes now, but look for more exciting things to come in 2009!

Sweet Potato Pie

(for 1 9" Pie)

3 Medium Size Sweet Potatoes
1 stick of butter
1/2 to 1 cup of evaporated Milk
2 eggs
1/2 to 1 cup of sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla
1/2 teaspoon baking soda
fresh lemon

Preheat oven at 350 degrees. Peel and cook sweet potatoes until soft. Mash well,squeeze a half a lemons juice over potatoes to preserve orange color. Then add eggs, sugar, milk and butter. Mix with electric mixer until smooth. Add more sugar to taste and milk if needed. Add all spices, vanilla and baking soda. Blend well. Pour batter into pie shell. Bake for 45 minute to an hour.

This is a family recipe! This is the first time I have ever attempted to make a sweet potato pie. I will check back after Thanksgiving and let you know how it goes!

Mac & Cheese

(This is my recipe. I learned from my Mom and added some things of my own. I have several Mac & Cheese recipes. But this one is Darrick's favorite)

2 lbs. Mac Noodles
1 to 2 cans of evaporated milk
1 block of kraft american cheese
1 small block of Montery Jack cheese
block of cream cheese
2 cans of cheddar cheese soup
1/2 stick of butter
salt & pepper

*Amount of noodles used will be determined by the size of your baking dish.

Preheat oven to 350. Dice cheese. Cook noodles. (slightly firm) Pour cooked noodles into large baking dish. Stir is slices of butter coating noodles evenly. Sprinkle with salt & pepper.
Add diced american, montery and cream cheese. In a small sauce pan combine cheddar cheese soup and evaporated milk to make a sauce, warm on low heat. DO NOT SCORCH! Pour cheese sauce over noodles. You can add more soup or milk to achieve the consistency you prefer. Some like firm mac & cheese others, creamy. Bake for 30 to 45 minutes. Again to you preference.

Sweet Potato Soufflé

Yield: 8 Servings

3 c Mashed sweet potatoes (cooled)
1 c White sugar (1/2 C sugar)
2 Eggs, beaten
1/3 c Milk
1 ts Vanilla
1/2 ts Salt (optional)
Cinnamon
1 Stick butter, melted (softened)

--------------------------TOPPING------------------ -------------
3 1/2 TBS Melted butter ( 1/3 C cold butter )
1/3 c Flour ( 1//3 C flour )
1/2 c Brown sugar ( 1 C brown sugar )
1/2 c Nuts ( 1 C pecans, chopped )

Combine all ingredients. Top with topping.
Bake in 350 oven for 25 minutes.

My directions:
In a mixing bowl, beat sweet potatoes, sugar, milk, eggs, (salt), vanilla, & cinnamon until smooth. Transfer to a greased 2 qt baking dish.

In a small bowl, combine brown sugar and flour. Cut the cold butter into the mixture until crumbly. Add pecans. Sprinkle over potato mixture.
Bake uncovered at 350 for 25 - 30 minutes or until golden brown.

My recipes calls for 1/2 cup of sugar and 1/2 C butter. If you use salted butter, eliminate the salt.

The topping ingredients in parenthesis are my recipe.

I usually double the topping recipe. If you use a long casserole pan in stead of a deep one, you need to double the topping to cover the potato mixture.

For the Sweet Potato Soufflé topping you can substitute 1 cup oatmeal instead of the nuts that's what I do because I'm allergic to nuts.

CORNISH HENS WITH STUFFIN..OR RICE
6 CORNISH HENS
1 LARGE ONION
1 LARGE GREEN PEPPER
1/2 STICK OF BUTTER
2 BOXES OF STOVE TOP (QUICK) OR MINUTE MAN RICE
POULTRY SEASON
SALT AND PEPPER

*PRE HEAT OVEN TO 350 WASH AND CLEAN HENS TAKE OUT ALL THE EXTRA GIBBLETS
*START COOKING STUFFIN MIX OR RICE .....IT MIGHT TAKE 5 TO 7 MINUTES FOR EITHER YOU PREFER FOLLOW THEIR DIRECTIONS..

*CUT UP ONIONS AND PEPPERS PLACE IN THE BOTTOM OF ROASTER
*RUB THE HENS WITH BUTTER ON THE OUT SIDE
*SEASON THE HENS WITH POULTRY SEASON AND SALT AND PEPPER
*STUFF THE HENS WITH THE STUFFIN OR RICE
*CLOSE THE HENS LEGS BACK SO THE STUFFIN OR RICE DONT DRY OUT!!!!!!
*PLACE HENS ON TOP OF THE ONIONS AND PEPPERS
*PUT 1 TO 1 1/2 CUP OF WATER IN THE BOTTOM OF ROASTER
*COVER LOOSELY WITH ALUMINFOIL
*BASE HENS EVERY 20 MINS EVERY ONE OF THEM EVEN THE STUFFED PART!!!!! SO IT WONT BE DRY..
*TAKE FOIL OFF 40 MINUTES INTO COOKING
*COOK FOR 1 HOUR AND 20 MIN
*TO KNOW THE HENS ARE DONE PORK THEM WITH A FORK TO MAKE SURE NO PINK IS RUNNING OUT.. EVERYONE OVEN IS DIFFERENT..

THIS IS A GOOD RECIEPE FOR THE PERSON WHO DONT WANT THE TURKEY ... OR LOOKING FOR SOMETHING THAT TASTE BETTER AND QUICKER.... ENJOY.

Red Velvet Cake (Southern Style)

Cake:
2 1/2 c flour
1 1/2 c sugar
2 teaspoon (t) cocoa
1 t salt
2 c vegetable oil
1 c buttermilk
1 t vanilla
2 eggs
1 bottle red food coloring

Icing:
1 8-oz pkg cream cheese
1 lb powdered sugar
1 stick butter (softened)
1/2 t vanilla
1 c chopped black walnuts (optional...I like it better without the walnuts)

1. Sift the dry products (flour, sugar, cocoa, salt) together (yes, you must buy a good old-fashioned sifter).
2. Mix the wet (vegetable oil, buttermilk, vanilla, eggs, red food coloring) products together.
3. Mix the dry and the wet together.
4. Bake for 40-50 minutes (place toothpick in cake...if it comes out clean, your cake is ready).
5. Let the cake cool off before attempting to put the icing on the cake. The cake is so moist, it will crumble if you don't wait.
6. Use the above icing recipe or but cream cheese icing and put it on your cake.
7. You can use a bundt pan or 2 small cake pans (to make a 2-layer cake) but make sure you spray the pan with Pam or something similar.

I just made my first sweet potato pie! I followed the recipe I recieved from my Mom and posted here. And I have to say it was pretty much ON! I will post pics soon. But I used deep dish pie shells, and I let it cook for an hour. 45 minutes wasn't long enough as the recipe states.

I am going to attempt the red velvet cake tomorrow I think. But, I need to get "an old school" sifter first.

On the Sweet Potato Pie, my Mom forgot to tell me to add a 1 or 2 tablespoons of flour to the blend to help it thicken. I did not do this step, but they still turned out great!

Crock Pot Greens

Fresh Greens of in any variety
(I mix mustards,turnips & collards)
1/4 cup of Apple Cider Vingegar
less than a 1/4 a cup of sugar
3 tablespoon of Olive Oil
smoked turkey necks
salt
pepper
*optional- fresh clove of garlic

Pick and wash your fresh greens until there is no grit. (Pre cut greens will still need to be washed.)
Pour vinegar,oil,sugar with 2 or 3 parts of the turkey & sliced garlic into the bottom of your crock pot. On top, put a layer of greens with salt & pepper and turkey part. Repeat layering greens, seasonings and turkey until the crock pot is full. After greens cook down you can add another layer(approx. 30 mins.) Cover and allow greens to slow cook until tender on low setting for approx. 5 to 8 hours. Stir occasionally. Greens will cook down and produce more stock, you can add a bit of water to your stock base if you'd like.
You can also cut your smoked turkey necks into smaller parts if they are large, to stretch.

This is really cute. I a REAL housewife. But not the best cook from scratch I will admit. But I have been trying to do better than my mother did with me,with my kids. My daughter & son will be learn the way around the kitchen. I may try a few for Christmas. But just because I'm no Paula Dean or Rachely Ray, I am still a REAL housewife. or should I say Wifey! I love it!

I'd like to suggest to the post looking for alternative meats for the holidays a nice rack of lamb or lamb steaks. Or a pot roast. Or seafood to be really out of the box. Try losbster or crab legs.
I tend to do lamb for Xmas since we do turkey and or ham for Thanksgiving. Oh and Deer or Duck are nice options too!

This is cute and everything, but why do women HAVE to cook! Why cant some spicy husbands or boyfriends cook for a change. Especially during the holidays? Do men really want a women that can cook anymore? Don't they want a independent woman that has a career and no time to be in the kitchen these days. That seems to be the trend
